Ginger Mango Tofu

I couldn’t resist! Ain’t it gorgeous? Go on… look at it up close and go get a tissue to wipe up the drool. Go on. I’ll wait… I’m house/kitty-sitting for my friends in California. They have a great, open kitchen, modern appliances, a well-stocked pantry and wonderful knives and pots — and a dishwasher! I’ve got a dishwasher back in NY, too. I call it Laura! Anyway, since I’ve been here, I’ve shopped at various natural markets where LOCAL produce is plentiful, attended a vegan baking class with Colleen at the healm (love her!) and have cooked, cooked, and cooked yummy meals. Pictured is my latest endeavor — Isa’s Mango Ginger Tofu. I don’t cook tofu much, but I figured it was about time to try one of the many delicious tofu recipes I have. The verdict? In a word, YUM!

I made the marinade yesterday and let the tofu sit in it overnight. I doubled the amount of jalapeño just because I wanted to get my spice on!  I baked it for dinner this evening along with some Basmati rice and steamed asparagus. I think I get bonus points for coordinating the plate with the dish, or really, my friends whose dish it is should get the bonus points! 

And the best thing about making tofu at home is that I get to determine how thick the tofu slices are! Those of you who have had the (dis)pleasure of dining out with me, know how anal I am in regard to the size and thickness of the tofu in the menu items. I like to think of it as a loveable quirk of mine. (Stick around, I’ve got tons of ‘em!)

OK — gotta go — I think my Peanut Butter/Chocolate Bars are ready for dessert!
