Eat Me, I’m Irish!
OK, I know that post title may mean this blog loses its PG-13 rating but I had to say it!
I’m not Irish… well, I guess a little but the family seems to ignore that small piece of our genetic puzzle for some reason… but on this day I and everyone am/is, right?! Even my canine buddy Dixie’s Irish today! Check out her insurmountable enthusiasm watching the largest St. Patrick’s Day parade in the world! (Hey, isn’t there another country filled with virtually no one but Irish folks and we’ve got the largest parade? Funny that!) Even though I may not be familiar with Danny Boy and the sound of bagpipes makes me cringe (sorry, bagpipers! Nothing personal!) I felt like celebrating the day in my favorite way — by cooking!
I doubt if typical Irish dishes and “vegan” go hand in hand, but leave it to Myra Kornfeld to produce a kick-the-blarney-stone recipe in honor of Ol’ St. Pat! This Leek and Parsnip Soup with Horseradish and Frizzled Carrots was sublime! Uber flavorful and so filling AND authentic. It has potatoes and leeks and chopped four leaf clovers! It served me well as a whole meal for 3 days straight! As you can see from the photo my “frizzled” carrots sorta turned out… let’s see… how do I put this?… burnt! Nevertheless, the dish was still yummy if slightly charred.
I’ve gotta say, I think I’m falling head over heals in love with parsnips. Slightly sweet, they add a really nice flavor to foods and can be eaten raw or can be shredded or chopped and thrown into a salad or a soup. I see a real future for us.
This dish calls for some chopped fresh dill which I personally love thanks to Mom who has kept a few tons of the stuff in the freezer since I was the height of a leprechaun. Plus it’s green which is a necessity for a St. Patrick’s Day dish, imo. But, if you don’t like the herb (you know who you are, ZS!) you’re probably out of luck with this recipe. I can’t imagine it without the dill and I don’t know what you could use in its stead (maybe you really could make use of four leaf clovers!)
Try this recipe! If you can’t find a pot of gold, might as well have a pot of Vegan Potato & Parsnip Soup!
