It’s a Breakfast Miracle!

I love this way of making oatmeal. It’s delicious and very filling yet doesn’t feel “heavy.”I’m not one to like to eat a lot first thing in the morning, but when I need to run out the door with some stored energy, this is a great meal!

  • hot cereal of your choosing
  • 1 Tbls. of ground flax seed or chia seed

a puree of:

  • 1 apple of your choosing
  • 2 Tbls. of almond butter (or other nut butter or just an ounce or two of nuts — everything turns butter-like in the food processor)
  • Sprinkling of ground cinnamon
  • maple syrup to your taste
  • Drop of vanilla (optional)

Cook the cereal with the ground flax seeds or chia seeds (you need your Omega-3s EVERY day! If using flax seeds, best to grind your own and keep a few days’ worth in the freezer! Chia seeds are less delicate and can remain unground and at room temperature.)

Meanwhile, get the food processor(FP) out. If you’re using whole nuts, put them in the FP first to give them a head start and grind them up a bit. If you’re using nut butter, no need to pre-blend, just drop 2 Tbls. or so into the FP. Cut the apple into manageable pieces and add all of it to the FP — or if you want some chunkiness, reserve a quarter of the apple and mix it in to the final product. Pour in a spoon or two of syrup and a drop of vanilla, if so desired. Sprinkle in some cinnamon. Blend the concoction to your preferred consistency.

When the cereal is cooked to your desired consistency, put it in your bowl. Add the apple mixture and the chopped apple, if you’ve reserved any. Mix together. Enjoy the party going on in your mouth. By combining the apple mixture (at room temperature or colder) and the oatmeal (at a boiling point) the meal is ready for immediate consumption. No waiting to cool it off or blowing on each spoonful! Perfection!

This is so good for so many reasons. You’ve got a serving of fruit, your Omega-3 for the day, cinnamon which is good for so many things including leveling your blood sugar, a serving or 2 of whole grain-goodness, several grams of protein, and a little sweetness for the sake of your taste buds. Need I say/type more?
